Just Let Me Make It To Friday

In seven days, my parents, boyfriend and I (and my brother hopefully also!) will be touching down in beautiful, sunny and (most importantly) hot St. Thomas in the USVI.  I could not be MORE READY or PREPARED for some much needed time away from vacuums, cleaning solution, school work, or pots and pans.  Alex has been hard at work too and the sun is calling our names… oh, and the Pina Coladas too.

I can’t WAIT to get out my camera and do some fantastic shooting!  The people, sights and sounds of the island are truly magical.  It’s going to be great to come back with a full roll of film, and hopefully a slight tan too.

Exiting My Hiatus

We’re all guilty of this:  Time presses on, jobs get busier and we get increasingly lazy.  We stop eating well, spending quality time with family and friends, and worst of all: we stop exploring.  Of anyone, I am most guilty of all of these things.  I can’t believe that I haven’t written a SINGLE word on my blog in over a YEAR!

I thought to myself the other afternoon, “Why did I stop writing?  I really love that blog and it’s SUCH a stress reliever..”

Well, I’m going to give this the old college try to get back into it!  No more laziness.. No more excuses on why I shouldn’t spend time in new restaurants, going to more events, and most importantly: getting out and exploring new, unmarked terrain.

Now, what I’m about to say might make me sound a bit spoiled.. but please, don’t judge.  For Christmas this year, my boyfriend Alex and I were blessed with an AMAZING gift from Santa:  A sizeable sum of money to spend on the vacation of our choosing for this year.  “Are you kidding me??” was all I could really think to say.  My imagination started running wildly when I started envisioning all the architecture, history, shopping and of course the cuisine that we could explore.  Instantly we thought Paris would be fantastic, as Alex has never had the joy of traveling internationally… I was itching to get him across the pond!   The thought of being able to show him the most magical and amazing parts of the world literally made my mouth water.  I don’t know what it is about venturing to some place exotic and intriguing that really gets my engines fired..  I’m starting to think that travel really sets you free; and these days, I’m in need of serious freedom.

It’s been just over a month since we were given the amazing gift, and I have to say, we haven’t been discussing any of the plans as of yet.  We both work tirelessly at high stress jobs, and at the end of the day, the only thing we both want to do is sit in comatose states in front of our laptops or the bube-tube.  I know, it’s sad.

But.. there is a silver lining to this dark, storm cloud!  February is the turning point for winter and as we creep slowly into Spring, I know we’ll be rejuvenated and ready to start seriously planning this incredible adventure. So far, we’re thinking about:  Venice.  Rome.  Paris.  Barcelona.  Madrid.  Any other ideas or suggestions are most certainly welcome!!

With Love.. From My Diabetic Kitchen!

I love sugar.  Let’s be honest – so do most humans living on this Earth.  However, I live with Type 1 Diabetes and with the holidays coming around I have to think of fun and creative ways to get that sugar taste – without actually using the white devil-ish stuff!  My mother is a Saint and has been coming up with these amazing delicious recipes for as long as I can remember.  I’ve had Diabetes for the past 19 years (this December is my anniversary!) and to this day, I can tell you with complete honesty and sincerity that when I eat these deserts, I don’t miss sugar at all.  AT ALL.  Please, I urge you to give them a try.  Whether you know someone living with Diabetes, or if you just want to reign in your waistline for the holiday season and cut your carbs a bit, these two deserts won’t make you feel deprived at all.  In fact, they will probably give you a little boost at the end of your meal because you won’t have that sugar crash and food coma!  Chow down my loves!!

Low Carb Key Lime Pie 🙂

15 grams of Carbohydrate per serving.  Serves 8

 

1 packet Knox unflavored gelatin

3 Tablespoons lime juice

½ cup boiling water

9 packets Equal

1 cup evaporated skim milt

1 teaspoon vanilla

Juice of 1 ½ limes

2 drops green food coloring

9” graham cracker crust

  • Sprinkle gelatin over 3 Tablespoons lime juice and let stand for 1 minute.  Add boiling water and Equal.  Stir.  Refrigerate for 45 minutes.
  • Combine milk and vanilla in a small bowl.  Freeze for 30 minutes.  Remove from freezer and whip at high speed until stiff.  Stir the juice of 1 ½ limes and the food coloring into the whipped milk.  (Save the remaining ½ lime for garnish)
  • Blend the gelatin/lime juice mixture into the whipped milk/vanilla/lime juice mixture.
  • Spoon into the graham cracker crust.  Chill until firm.  Garnish with slices of lime.

Apple Pear Crisp – YUMMY!! 🙂

1/8 of this dish = approximately 20 carbs

Preheat oven to 375°

1 ½ lbs baking apples (such as Cortland,) peeled, cored and thinly sliced
(The apples must be sliced thinly, not cubed.)
1 ripe pear, also peeled, cored and thinly sliced
3 Tablespoons flour
3 Tablespoons butter or margarine, softened in the microwave
¼ cup frozen, unsweetened apple juice concentrate (in the freezer section of the grocery store)
½ teaspoon cinnamon
Dash of nutmeg
¾ cup (10) graham crackers, crushed
4 packets of Equal or Splenda

  • In an 8” square baking dish, toss the fruit with 1 Tablespoon of the flour, plus the apple juice concentrate.  Stir.
  • In a small bowl, combine the remaining 2 Tablespoons flour, the spices and the butter.  Mix well.  Gradually stir in the graham cracker crumbs.  Sprinkle this mixture over the fruit.
  • Bake 30 minutes at 375°
  • Remove from oven and sprinkle with the Equal or Splenda

 

 

What are you thankful for?

It’s this week that I really have a ton to be thankful for.  Great friends, fantastic family, a job that keeps me (sort of) fed, and a life that is really fulfilling.  Here are some of the best things in the world in my eyes.. things that I will always be thankful and grateful for!!!  ❤

The Macy’s Thanksgiving Day Parade is so iconic American – and cheesey – that you just HAVE to love it and watch it every year.  There’s really no getting around it!  I love sitting around in my PJ’s, with my coffee, watching my family cook and staring at the floats on TV.. it makes me feel like I’m five years old again.

Disney.. Do I really have to explain this one?  The parks, the characters, the movies.. The Main Street Electrical Parade!!  It’s ALL good! I remember my first trip to Disney World, I think I was around 7 or 8 and I can remember every single detail of that magical day.  It was pure perfection in my eyes.  I still love going, as a matter of fact.  I love the fact that you can really, and truly become a child again.  I love seeing the couples wander hand-in-hand, wearing Mickey ears.. the best part being, they’re elderly.  🙂

 

I am the prettiest princess in all the land.. Disneyland at least!

I am a Red Sox fan.  Not a bandwagon fan, but a true-blue part of Red Sox Nation.  We are a mighty stronghold, and when you live in Boston, Massachusetts..  the Red Sox become a part of you.  You can’t escape them.  This city and it’s inhabitants eat, drink and breathe baseball every year.  Every single season, people come out of the woodwork, from being cooped up all winter long with no baseball to turn to, and they come out in throngs to Fenway Park for the Opening Day Game.  If you have never experienced the pandemonium that is Red Sox Nation – I urge you to come to a game and see for yourself.  You’ll either be shocked, or in love.  Go Sox!!

So, the number one thing I am thankful for is my amazing friends, family and my boyfriend, Brandon.  I thank my lucky stars everyday to have such an incredible group of people around me.  I am blessed to have them and honored to call them true friends.  We get into a lot of trouble together, make awesome memories and have great times and hilarious stories to tell afterwards.  I don’t know where I would be without them…  This week, sit around and watch Macy’s Thanksgiving Parade, drink some coffee, eat some amazing food and ask yourself, “What am I thankful for?”  HAPPY THANKSGIVING EVERYONE!!!

A few more additions to St. Malo…

I just can’t stop myself.  I had such an incredible time in St. Malo, and I took SO many pictures, that I feel compelled to share them all!

The bottom two pics, are at the restaurant Lion d’Or.  We ate here more often than not.  It might have been the cute waiters, or maybe it was the fact that they had outdoor seating and a live band.. or most likely it was because the menu was in French AND in English.  Merci, Lion d’Or!!

Pirate Fortress: St. Malo, France

This past August, I had the most incredible opportunity to visit Europe with my Grandfather and Mother.  One of our many stops included St. Malo, a pirate fortress still intact to this very day.. located on the coast of France.  It’s a truly magical place, with fantastic cafes and restaurants, gorgeous boutiques littered throughout the cobblestone streets and street performers and artists showing their worldly goods.

Days full of sunbathing, shopping, people-watching and coffee (or wine!) drinking was nothing short of amazing.  I could have moved there in an instant.  It’s too bad when silly things like work and school hold you back!

I managed to snag some amazing finds from the shoppes in St. Malo.  Le Blanc du Nil, was light and airy – just like their egyptian cotton dresses, skirts and tops.  Love, love!  My truly favorite store was a hidden jewel – literally.  I can’t for the life of me remember what the name of the boutique was, but once it comes back to me – I will definitely let you know!  Truly unique – edgy, flirty, ethereal women’s clothing.  It’s not often that clothes “speak to me,” but, these did.  😉  I want to go back!

Oh my good God... the seafood was INCREDIBLE

 

 

Okay, let’s talk food for a second here.  I ate a Horseburger.  Yes, a burger made from horsemeat.  Apparently, that’s very commonplace in France – and honestly, it was delicious!  When your diet consists of “moules avec frites,” for most of your trip, you’re willing to try almost anything to get a bit of variety.  I love seafood but I can only eat so many mussels!   Oh, and the coffee… is… heavenly!  It’s so strong, your spoon practically stands at full attention.  But, that’s okay.. because you need full strength if your going to spend some serious dough with this Blondie.  After spending five total days in St. Malo, I was ready to head on.  I love it here, it’s absolutely breathtaking and it’s a perfect place to relax; however, it’s small.  You can only wander the cobbles for so long before you’re ready to head out to sea.  St. Malo is removed from other cities, so if you’re without a car, you become a bit.. deserted.  Anyways, our next stop was Bayeux: home to the famous Tapestry.  My next post will bring us to Normandy.. with guns blazing and crazy tour guides, quaint Inns and (not) so exciting food!
